2 ½ pounds russet potatoes diced

½ teaspoon black pepper

½ cup water


Instructions

  • Cut sausage into bit sized pieces. Heat a 12 inch skillet on medium high heat and add 1 tablespoon olive oil and add the sausages, chopped onions and garlic. Saute until browned about 3-4 minutes then remove to a plate and set aside.
  • Add the remaining olive oil and add the diced potatoes salt and pepper and cook 5 minutes stirring occasionally.
  • Add in the water reduce heat to medium low and cover the skillet, cook 10 minutes. Give the potatoes a toss about half way through.
  • Remove the lid and turn the heat back up to medium high cook another 10 minutes or until potatoes are fork tender. Add the sausage and onions back in and toss.
  • Serve as a side dish to your favorite protein or eggs!

Notes

You can use Yukon Gold potatoes if you prefer. I don’t peel the potatoes but you certainly can. Any precooked sausage will work like kielbasa, andouille, smoked sausage, or hot links.
