How to Prepare Grilled Peach and Arugula Salad:
Creating a delightful Grilled Peach and Arugula Salad is simple and rewarding, offering a perfect combination of flavors. Begin by preheating your grill to 400°F. Brush the grill grates or a grill pan with canola or grapeseed oil. Place the peach quarters, cut side down, on the grill. Grill for about 4 to 5 minutes until they achieve lovely grill marks and become slightly tender.
While the peaches are grilling, prepare the salad base. Divide 4 cups of fresh baby arugula into two plates. Add a quarter cup of toasted walnuts for a delightful crunch, followed by 2 oz of crumbled goat cheese for creaminess. Finally, top each plate with a quarter cup of thinly sliced red onions to enhance flavor.
Once the peaches are ready, remove them from the grill and allow them to cool slightly. Slice each quarter in half and add them to the salad. Drizzle with your preferred dressing—white balsamic ginger vinaigrette complements this dish beautifully, so feel free to use around two tablespoons for that extra zing. For a different flavor profile, drizzle balsamic reduction over the salad. This will enhance the sweetness of the peaches and bring a gourmet touch.
Another exciting variation is to mix in goat cheese or feta. Both cheeses lend creamy richness, balancing the peppery arugula. If you’re craving a more substantial meal, add grilled chicken for protein, making it perfect for a light lunch or dinner.
