Ingredients:
To create a delightful Chicken Alfredo, gather the following ingredients:
– 200 g (7 oz) chicken breast, sliced in half horizontally
– Salt and pepper, to taste
– 1 tablespoon olive oil
– 250 g (8 oz) fettuccine
– 2 cups of milk (any fat percentage)
– 1 ½ cups chicken stock or broth
– 1 large garlic clove, minced
– ½ cup thickened or heavy cream
– ¾ cup freshly grated Parmesan cheese
– Fresh parsley, for garnish
Start by seasoning the chicken breast with salt and pepper. In a large skillet, heat olive oil over medium-high heat, then add the chicken and cook until golden brown, about two minutes per side. Once cooked, remove the chicken and let it rest.
While the pasta cooks, bring milk, chicken broth, and minced garlic to a simmer in the same skillet. Add your fettuccine and cook until al dente.
Finally, incorporate the cream and Parmesan, stirring until a creamy sauce forms. Serve hot, garnished with parsley for a beautiful finish. For more chicken-related inspiration, check out Chicken Salad Sandwich!

While the pasta cooks, heat a large skillet over medium heat and melt butter. Add minced garlic, sautéing until fragrant. Next, introduce the sliced chicken breast, seasoning with salt and pepper. Cook until fully browned and no longer pink.
Once your chicken is ready, pour in heavy cream, allowing it to simmer gently. Stir in freshly grated Parmesan cheese and continue to mix until the sauce is smooth. Don’t forget to add a pinch of nutmeg for a subtle warmth. Drain the pasta and combine it with your creamy sauce, ensuring everything is well-coated.

Tips for Perfecting Chicken Alfredo:

Cook the chicken in a skillet over medium-high heat until it reaches the perfect golden brown, ensuring it stays juicy inside.
For the Alfredo sauce, combine heavy cream, butter, and freshly grated Parmesan cheese. Be sure to stir constantly to avoid lumps, creating a smooth and creamy consistency. As you combine the sauce with the pasta, keep a portion of the pasta water to adjust the sauce texture as needed. - Yield: 4 servings 1x
Description
Creamy and delicious Chicken Alfredo made with perfectly cooked fettuccine, tender chicken breast, and a rich parmesan sauce.
Ingredients
200 g / 7oz chicken breast
cut in half horizontally
Salt and pepper
1 tbsp olive oil
250 g / 8 oz fettuccine
2 cups milk
any fat %
1 1/2 cups chicken stock / broth
1 large garlic clove
minced
1/2 cup thickened / heavy cream
3/4 cup freshly grated parmesan
Parsley
for garnish
Instructions
- Sprinkle both sides of the chicken with salt and pepper.
- Use a skillet large enough to fit the pasta.
- Heat oil over medium high heat. Add chicken and cook for 2 minutes on each side until golden and cooked through. Remove onto plate and rest for 5 minutes, then slice while pasta is cooking.
- Add milk, chicken broth and garlic. Bring to simmer then add pasta.
- Move pasta around every 30 seconds or so until it is softened (around 3 minutes) so it doesn’t stick. Once pasta is softened, reduce heat to medium and stir every couple of minutes.
- At about 9 – 10 minutes, the pasta should be almost cooked but there should still be liquid covering the base of the skillet. Add cream and parmesan and mix.
- Simmer, stirring occasionally, for ~2 minutes, until sauce is thickened and pasta is cooked. If sauce becomes too gluggy, add a splash of hot tap water.
- Adjust salt and pepper to taste and serve immediately, garnished with freshly grated parmesan and parsley!
Notes
This recipe works with any type of cream, but the richness of the sauce will vary. Freshly grated parmesan melts better into the sauce than pre-grated. The sauce should be removed from the heat while still saucy as it thickens quickly.
